HK Style Steamed Milk Pudding | 鲜奶炖蛋


Serves: 5-6 pax (small ramekins)

Ingredients:

  • 4 eggs
  • 500ml fresh milk
  • 4 tbsp fine sugar
  • few drops of vanilla essence
Prepare:
  • 6x small ramekins
  • cling wrap
  • steamer

Steps:

  1. Beat the eggs and sugar until sugar is fully dissolved
  2. Strain the eggs
  3. Mix in the milk and vanilla essence, and strain again
  4. Pour evenly into ramekins and scoop out the bubbles on top
  5. Cover with cling film
  6. Put on the steamer and turn on big fire
  7. When water is boiling, change to small fire and steam for another 12 mins
  8. Set aside to cool and chill
